Ingredients:

  • 1 lb fresh green beans, trimmed
  • 2 cups water

  • 1 tbsp sugar (optional, for a slightly sweet brine)
  • 2 cloves garlic, peeled and smashed
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds

  • 1 sprig fresh dill or 1/2 tsp dried dill

Instructions:

  1. Prepare the Green Beans: Trim the ends of the green beans to fit the height of your jar(s). Rinse them well and set aside.
  2. Make the Brine: In a small saucepan, combine water, vinegar, salt, and sugar (if using). Bring the mixture to a boil, stirring until salt and sugar dissolve. Remove from heat.
  3. Pack the Jar: Place garlic, peppercorns, mustard seeds, red pepper flakes, and dill in the bottom of a clean, heat-proof jar. Pack the green beans tightly into the jar, standing them upright if possible.
  4. Add the Brine: Carefully pour the hot brine over the green beans, ensuring they are fully submerged. Leave about 1/4 inch of headspace at the top of the jar. Use a clean utensil to press the beans down and release any air bubbles.
  5. Seal and Cool: Close the jar with a lid, let it cool to room temperature, then refrigerate.
  6. Pickle and Enjoy: Let the green beans pickle for at least 24 hours in the fridge (they get more flavorful after a few days). They’ll keep for up to 1 month in the refrigerator.
