Vegan Mushroom Gravy Recipe

  • 1/4 cup almond milk or other plant-based milk (optional, for creaminess)

Instructions:

  1. Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil or vegan butter over medium heat. Add the onion and cook for about 3-4 minutes until soft and translucent.
  2. Cook the Mushrooms: Add the minced garlic and chopped mushrooms to the skillet. Sauté for 5-7 minutes until the mushrooms release their juices and become golden brown. Stir in the thyme and rosemary and cook for another minute to release the flavors.
  3. Add the Flour: Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 1-2 minutes, stirring constantly to avoid burning. The flour will help thicken the gravy.
  4. Add Broth and Seasonings: Slowly pour in the vegetable broth while stirring constantly to avoid lumps. Add the soy sauce for a deeper flavor, then season with salt and pepper to taste.
